About this Recipe
A comforting and hearty baked potato piled high with cheesy goodness and warm baked beans. The perfect easy weeknight meal!
Instructions
- 1
Preheat your oven to 200°C / 400°F / Gas Mark 6.
- 2
Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.
- 3
Prick the potatoes several times with a fork. This helps steam escape while baking.
- 4
Rub the potatoes with olive oil and sprinkle with salt.
- 5
Place the potatoes directly on the oven rack. If you're worried about drips, place a baking sheet on the rack below.
- 6
Bake for 45-60 minutes, or until the potatoes are soft and easily pierced with a fork. The cooking time depends on the size of the potatoes.
- 7
While the potatoes are baking, gently heat the baked beans in a saucepan over medium heat, stirring occasionally. Alternatively, heat them in the microwave according to package instructions.
- 8
Once the potatoes are cooked, carefully remove them from the oven.
- 9
Cut a cross into the top of each potato and gently squeeze the sides to fluff up the inside.
- 10
Spoon the heated baked beans into the opening of each potato.
- 11
Top generously with grated cheddar cheese.
- 12
Optional: Add a knob of butter and a sprinkle of black pepper.
- 13
Serve immediately and enjoy your Cheesy Bean Mountain Jacket Potato!
